Deli Farm Charcuterie
This is a rapidly expanding venture making traditionally air dried salami and ham close to the rugged North Cornish coastline. Each of the products is carefully hand crafted combining traditional methods with modern technology to create perfect climatic conditions for drying and maturing. All the meat is sourced from local producers; this is mixed with freshly ground herbs and spices to produce a variety of flavours and textures and stuffed in natural casings.
During the air drying and maturing process the salami will loose up to 50% of their weight giving them a traditional dry, firm texture that concentrates the flavours
The salami come in three sizes and can be purchased whole or sliced and vacuum packed:
- Large 8 - 10cm diameter (1-2kg)
- Medium 4 - 5cm diameter (350-500g)
- Snack size 80 - 150g
At present there are 7 flavours:
- Pork and Beef
- Lightly Spiced
- Garlic
- Oak Smoked Paprika
- Fennel and Anise
- Coriander and Cumin
- Hot Peppery
Coppa is also available either whole or sliced.
